Ingredients
Scale
1 can rinsed and drained red kidney beans
1 cup cooked quinoa + ancient grains mix (or quinoa or brown rice)
3 mini cucumbers, chopped
1 container cherry tomatoes, halved
¼ cup fresh parsley, chopped
¼ cup fresh mint, chopped
Top with vinaigrette & mix!
Dressing:
¼ cup extra virgin olive oil
2 tbsp lemon juice or apple cider vinegar
2 tsp honey
1 clove minced garlic
Salt + pepper
Whisk everything together!
