Why i love this salad:
This beauty of a salad is full of colour & nutrients! Enjoy as a side, or top with some protein and enjoy as lunch! I suggest serving this with fish & brown rice!

- Olive Oil → Contains polyphenols that help balance of bacteria in our digestive tract

Ingredients
Scale
- 1 bunch kale, washed and chopped finely
- 1 cup cooked quinoa
- 1 can drained baby corn, chopped
- 2 roasted beets, sliced
- 1 large roasted sweet potato, sliced
- 2–3 tbsp goat cheese, crumbled
- 3 tbsp sunflower seeds
Dressing:
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 2 tsp raw honey
- 1 clove minced garlic
- 1/2 tsp sea salt
Instructions
- Place chopped kale in a large bowl
- In a small bowl whisk together salad dressing ingredients and pour onto kale. Using your hands massage dressing into kale and allow to sit for 10-20 minutes (this is optional, but allowing the dressing to soak into kale will enhance flavours)
- Mix in roasted beets, sweet potatoes & baby corn
- Top with sunflower seeds & crumbled goat cheese
- Enjoy
