Ingredients

Scale
  1. 1 bunch kale, washed and chopped finely
  2. 1 cup cooked quinoa
  3. 1 can drained baby corn, chopped
  4. 2 roasted beets, sliced
  5. 1 large roasted sweet potato, sliced
  6. 23 tbsp goat cheese, crumbled
  7. 3 tbsp sunflower seeds

Dressing:

  1. 1/4 cup olive oil
  2. 1/4 cup white wine vinegar
  3. 2 tsp raw honey
  4. 1 clove minced garlic
  5. 1/2 tsp sea salt

Instructions

  1. Place chopped kale in a large bowl
  2. In a small bowl whisk together salad dressing ingredients and pour onto kale. Using your hands massage dressing into kale and allow to sit for 10-20 minutes (this is optional, but allowing the dressing to soak into kale will enhance flavours)
  3. Mix in roasted beets, sweet potatoes & baby corn
  4. Top with sunflower seeds & crumbled goat cheese
  5. Enjoy
