The Instant Pot is one of my favourite products ever, especially because it makes meal planning and dinner so quick and easy! This Lemon Orzo Chicken Soup is the ultimate recipe for soup lovers looking to get a warm and hearty meal in the Fall or Winter!

  1. 2 tbsp ghee or olive oil
  2. 1 onion, chopped
  3. 2 carrots, chopped (not too small)
  4. 2 stalks, chopped (not too small)
  5. 2 boneless skinless chicken thighs (recommended ) or 1 boneless skinless chicken breast
  6. 1 handful lightly chopped dill ( approx. 1/4 cup)
  7. 1 carton low sodium chicken soup
  8. 2 tsp garlic powder
  9. 2 tsp Italian seasoning or thyme
  10. 1/4 cup orzo
  11. 1/2 lemon


  1. Set your Instant pot to sauté and add in the ghee. Cook the onion, celery and carrots for 5 minutes. Add in everything else aside from the orzo and lemon. Cook for 12 minutes. Do a quick release. Using 2 forks shred the chicken, add in the orzo and steam for 2 minutes. Quick release and remove the lid right away so that the orzo doesn’t get mushy. Season as desired and I like adding in the squeezed lemon by hand! If you are a lemon lover you can squeeze it in when you add the orzo.
