Ingredients

  1. 2 tbsp ghee or olive oil
  2. 1 onion, chopped
  3. 2 carrots, chopped (not too small)
  4. 2 stalks, chopped (not too small)
  5. 2 boneless skinless chicken thighs (recommended ) or 1 boneless skinless chicken breast
  6. 1 handful lightly chopped dill ( approx. 1/4 cup)
  7. 1 carton low sodium chicken soup
  8. 2 tsp garlic powder
  9. 2 tsp Italian seasoning or thyme
  10. 1/4 cup orzo
  11. 1/2 lemon

Instructions

  1. Set your Instant pot to sauté and add in the ghee. Cook the onion, celery and carrots for 5 minutes. Add in everything else aside from the orzo and lemon. Cook for 12 minutes. Do a quick release. Using 2 forks shred the chicken, add in the orzo and steam for 2 minutes. Quick release and remove the lid right away so that the orzo doesn’t get mushy. Season as desired and I like adding in the squeezed lemon by hand! If you are a lemon lover you can squeeze it in when you add the orzo.
