For those who don’t know, greek food is my absolute favourite cuisine! I love how fresh and flavourful all of the ingredients are, and this greek orzo side dish is a great way to switch up classic greek salad! This is a 10 minute recipe, and it’s so easy to make (and always a crowd favourite!). I love serving greek orzo with chicken or shrimp skewers, roasted broccolini and tzatziki.

Ingredients
2 cups cooked orzo pasta
1 cup cherry tomatoes, halved
2 baby cucumbers, chopped
1/2 each of an orange pepper and green pepper, chopped
1/3 cup red onion, chopped
1/2 cup kalamata olives
1 cup feta cubes, lightly packed
1/4 cup extra virgin olive oil
3 tbsp fresh lemon juice or red wine vinegar
1/2 tsp pink salt
1.5 tsp dried oregano
Freshly ground pepper to taste
