If you love pumpkin + chocolate you need to try this recipe. Perfect for Fall & Halloween 🙂 These are gluten free, dairy free + require zero baking. Enjoy as a snack or dessert!
Ingredients: 1 cup oats 6 pitted medjool dates ½ cup pumpkin puree ½ cup cashew butter or almond butter
Topping- ½ cup melted dark chocolate chips
1. Process the oats, dates, pumpkin puree and cashew butter until well combined. I used my @vitamix food processor attachment- so good!
2. Line a loaf pan with parchment paper, and using your hands thinly lay out the mixture.
3. Top with melted chocolate & freeze for 1 hour
4. Slice into squares
