CHICKPEA GREEN CURRY

 

Happy Monday friends! I spent the day working from home and had the chance to whip up a few meatless meal ideas that I’m excited to share with you over the week! This green curry recipe is SO easy to make and I hope you love it and feel free to use whichever veggies you have on hand!

Ingredients

  1. 1 tbsp coconut oil or olive oil
  2. 1 white onion, chopped
  3. 2 cloves garlic, minced
  4. 3 tbsp green curry paste
  5. 1 head of broccoli cut into florets
  6. 1 can of rinsed and drained chickpeas
  7. 1 can of rinsed and drained baby corn (not niblets)
  8. 1 cup bok choy
  9. 1 green pepper, chopped ( not too small)
  10. 1/2 tbsp coconut sugar
  11. 1 can full fat coconut milk
  12. 1/2 tsp red chili flakes ( omit if you don’t like spice)
  13. salt & pepper

Instructions

  1. In a large pot heat oil on medium heat and sauté onion for 3 minutes. Add in garlic, stir and cook another 2 minutes. Add in the rest of the ingredients and bring to a boil. Reduce heat to simmer, cover and cook for 20 minutes. ENJOY!

Notes

Serve with rice, quinoa, cauli rice, or zucchini noodles!
