Healthy comfort food makes me v happy 🙂 I shared this recipe on IG a few weeks ago, and thought it deserved it’s own spot on the blog! This hearty soup is packed with flavour and nutrients. I definitely need to make a batch and freeze for a cold winter day!
Ingredients
- ½ lb stewing beef
- 1 tbsp grass fed butter or olive oil
- 1 yellow onion, chopped
- 2 stalks celery, chopped
- 2 medium carrots, chopped
- 1 cup crushed tomatoes or tomato sauce
- ½ green cabbage, chopped
- 4 cups beef or chicken stock ( I prefer using beef!)
- 1 cup water
- 1 tsp garlic powder
- ½ tbsp paprika
- ½ tsp sea salt
- 1 tsp dried oregano
Instructions
Instant Pot:
Set your Instant Pot to “saute”. Add in butter or oil and once melted add in the beef. Stir occasionally until the beef is browned (3-5 min). Add in the rest of the ingredients. Close lid and cook on high pressure for 20 minutes. Do a natural release for 10 minutes, and then quick release. Season with salt and pepper!
Dutch Oven:
In a large dutch oven, heat butter or oil on medium heat. Once hot, add in beef and brown on each side ( approx. 3 minutes). Add in onion and cook until translucent. Add in the rest of the ingredients and bring to a boil. Reduce heat to simmer and cover. Cook 40 minutes 🙂
