Healthy comfort food makes me v happy πŸ™‚ I shared this recipe on IG a few weeks ago, and thought it deserved it’s own spot on the blog! This hearty soup is packed with flavour and nutrients. I definitely need to make a batch and freeze for a cold winter day!


Ingredients

Scale
  • Β½ lb stewing beef
  • 1 tbsp grass fed butter or olive oil
  • 1 yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 1 cup crushed tomatoes or tomato sauce
  • Β½ green cabbage, chopped
  • 4 cups beef or chicken stock ( I prefer using beef!)
  • 1 cup water
  • 1 tsp garlic powder
  • Β½ tbsp paprika
  • Β½ tsp sea salt
  • 1 tsp dried oregano

Instructions

Instant Pot:

Set your Instant Pot to β€œsaute”. Add in butter or oilΒ  and once melted add in the beef. Stir occasionally until the beef is browned (3-5 min). Add in the rest of the ingredients. Close lid and cook on high pressure for 20 minutes. Do a natural release for 10 minutes, and then quick release. Season with salt and pepper!

Dutch Oven:

In a large dutch oven, heat butter or oil on medium heat. Once hot, add in beef and brown on each side ( approx. 3 minutes). Add in onion and cook until translucent. Add in the rest of the ingredients and bring to a boil. Reduce heat to simmer and cover. Cook 40 minutes πŸ™‚
