STRAWBERRY SPINACH QUINOA SALAD

This vibrant salad is packed with nutrients, flavour and best of all- summer vibes! If you love the combo of sweet and salty, you need this salad in your life. The combination of strawberries, feta and balsamic just does it for me, ya know what I mean?

I love strawberries because they’re the perfect snack, dessert, and can also be incorporated into savoury dishes. They are also super nutrient dense! Fun fact – 8 strawberries have the same amount of Vitamin C as an orange! Cool right?

Summer is the best time to find strawberries in season (and super sweet!). Enjoy!

Salad Ingredients:

  • 2 handfuls baby spinach
  • 8 California strawberries, sliced
  • 1 baby cucumber, sliced
  • ⅓ cup cooked quinoa
  • 2 tbsp crumbled feta cheese
  • 8 pecans or walnuts
  • 1 tbsp chopped green onion or chives

Dressing Ingredients:

  • ¼ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp pure maple syrup
  • A sprinkle of salt and pepper

Instructions

  1. Combine salad ingredients in a bowl of your choice
  2. In a small mason jar, mix salad ingredients vigorously and drizzle on salad. *Dressing will make enough for 2 servings.
