Who says healthy food can’t be delicious? These carrots prove otherwise!
This vegan and gluten-free carrot side dish is the perfect healthy addition to any meal. Enjoy with fish, chicken, or in a wild rice bowl with sautéed kale. Add some colour and nutrition to your plate with this easy to make recipe.Print
2 lbs carrots ( try to get thinner looking carrots)
1.5 tbsp extra virgin olive oil
Salt & pepper
¼ cup parsley, chopped
¼ cup mint, chopped
¼ cup pistachios, chopped
2 heaping tbsp sesame paste
¼ cup water
Juice of 1 small lemon
1/2 tbsp pure maple syrup
1 clove garlic, minced
Salt & pepper to taste
Preheat the oven to 400. Peel 1 lb on carrots, and slice the larger ones down the middle. Place on a lined baking sheet and drizzle with olive oil, salt & pepper. Roast for 35- 40 minutes until tender and slightly gloden. Once the carrots are ready, place on a dish and top with chopped herbs, tahini dressing and chopped pistachios.
Whisk everything together in a small bowl and add a touch more water for a thinner consistency.
