This is the salad of my dreams. It’s hearty, healthy, and tastes even better after sitting in the fridge for a couple of days, making it perfect for meal prep.
– 1 head of kale, chopped
– 2 cups pasta of choice ( I used gluten free, high fiber)
– 2 grilled chicken breasts, chopped
– Caesar dressing of choice
– salt + pepper
– juice of 1 lime or lemon ( optional)
