HEALTHY PASSOVER MEAL IDEAS

As some of you may know, right now is the Jewish holiday of Passover which lasts one week. Everyone practices the holiday a little differently, but one of the main customs is to avoid eating leavened foods, such as bread, and depending on your traditions, legumes (such as peanuts, beans and peas), and rice. Instead, we eat unleavened bread known as Matzah (if you’re not familiar with what that is, think GIANT CRACKER). It can be a little tricky to stay healthy during this holiday because many people opt for an ‘all-things-matzah’ diet – matzah pizza, matzah lasagna, matzah french toast, ETC. I think the holiday sounds a lot more daunting than it really is, because there’s actually so many healthy options to choose from! I made this list for a client, so thought I would turn this into a blog post for anyone who might find it helpful this time of year. Hope it helps! Xx Jord

Breakfast:

  • Yogurt with fruit, chopped cashews and chia seeds
  • 2 eggs and sliced cucumbers
  • 2 egg omelette with onions, mushrooms, and goat cheese
  • Veggie scramble with any veggies in your house topped with chili flakes
  • Avocado matzah topped with sliced tomato, lemon juice, and scrambled eggs

Brunch/Lunch:

  • Shakshuka with matzah on the side
  • Matzah pizza topped with arugula
  • Big veggie salad topped with canned tuna
  • Vegetable soup and salad
  • Banana almond butter smoothie
  • Greek salad with chicken
  • Mixed green, quinoa, veggies, avocado and a poached egg topped with olive oil vinaigrette
  • Almond flour pancakes topped with banana, almond butter, and maple syrup
  • Chicken lettuce wraps
  • Cauliflower pizza with kale salad

Dinner:

      1. Zucchini noodles with turkey meat sauce
      2. Stuffed peppers with quinoa and veggies
      3. Chicken meatballs, roasted broccoli, and israeli salad
      4. Baked salmon with roasted cauliflower, sweet potato and vegetable soup
      5. Salmon burgers with green beans and quinoa salad
      6. Almond crusted chicken parm on zucchini noodles
      7. Chicken drumsticks, spaghetti squash, and roasted asparagus
      8. Steak with sauteed mushrooms, smashed potatoes and kale salad
      9. Sweet potato turkey shepherds pie
      10. Zucchini lasagna
