⁃1 lb lean ground beef
⁃1 white onion, chopped
⁃3 carrots, chopped
⁃3 stalks celery, chopped
⁃2 cloves garlic, chopped
⁃2 cups diced canned tomatoes with juices
⁃4 cups low sodium beef or veggie broth
⁃1 cup water
⁃1/2 cup pearl barley, rinsed + drained
⁃1 tbsp Italian seasoning
⁃small pinch of chilli flakes
⁃1/2 tsp salt
⁃Pepper to taste
1. In a large cast iron pot cook lean ground beef on medium heat until there is no pink left. Break it up with a spoon into small bits while cooking. Drain excess fat.
2. Add in chopped onion, carrots, celery and garlic. Cook another 5 minutes
3. Add in rest of ingredients. Bring to a boil. Reduce to simmer and cook 45 minutes covered.
4. Serve with chopped parsley on top ( optional)
