These delicious muffins are packed with nutrients and make for an easy healthy breakfast and/or snack when you’re on the go and need some quick fuel. All you need is to throw a few ingredients into a blender (aka. my fav blender, a Vitamix) to create these in only less than 30 minutes! Go make them now 😉 I promise they won’t disappoint.

2 cups rolled oats
1/2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
3 very ripe bananas
¼ cup olive oil
⅓ cup pure maple syrup
2 large eggs
1 tsp vanilla
Add ins:
1/4 cup mini chocolate chips
Instructions
1. Preheat oven to 350 degree celsius and grease 12 muffins tins with cooking spray.
2. In a Vitamix add in all the ingredients aside from chocolate chips. Blend until smooth.
3. Mix in chocolate chips, and distribute muffin batter into the muffin tins.
4. Top with oats & more chocolate chips (optional).
5. Bake 15-18 minutes.
