Description

Such an easy healthy meal that you can make in a pinch! Enjoy on it’s own, as a side dish or salad topper!


Ingredients

2 stalks celery, chopped
3 baby cucumber, chopped
1 container cherry tomatoes, halved
¼ cup red onion, chopped
1 cup fresh parsley, chopped
1 can beans, rinsed and drained
½ cup feta

Dressing:
¼ cup extra virgin olive oil
Juice of 1 lemon
1 tbsp red wine vinegar ( or more lemon)
Salt & pepper
