1 can of chickpeas, rinsed + drained and mashed aggressively with a fork
2 stalks of celery, finely chopped
2 tbsp fresh dill, chopped
2 tbsp vegan mayo
Few squeezes of fresh lemon juice
1–2 green onion, chopped
1 dill pickle, finely chopped (optional)
A sprinkle of chili flakes and salt + pepper!
Combine everything in a bowl and mix well!
*the chickpeas are a bit annoying to mash, but worth it 😉
