Ingredients

- 2 tbsp ghee or olive oil
- 1 onion, chopped
- 2 carrots, chopped (not too small)
- 2 stalks, chopped (not too small)
- 2 boneless skinless chicken thighs (recommended ) or 1 boneless skinless chicken breast
- 1 handful lightly chopped dill ( approx. 1/4 cup)
- 1 carton low sodium chicken soup
- 2 tsp garlic powder
- 2 tsp Italian seasoning or thyme
- 1/4 cup orzo
- 1/2 lemon
Instructions
- Set your Instant pot to sauté and add in the ghee. Cook the onion, celery and carrots for 5 minutes. Add in everything else aside from the orzo and lemon. Cook for 12 minutes. Do a quick release. Using 2 forks shred the chicken, add in the orzo and steam for 2 minutes. Quick release and remove the lid right away so that the orzo doesn’t get mushy. Season as desired and I like adding in the squeezed lemon by hand! If you are a lemon lover you can squeeze it in when you add the orzo.
