Base
- ½ cup cooked quinoa + 1 cup chopped kale
Toppings
- cucumber lentil salad, sliced radish, sweet potato, picked onions + a dollop of hummus for extra protein
Dressing
- Drizzle of olive oil & lemon juice
Instructions
- In a medium bowl, add the kale + quinoa at the bottom, and layer on the rest of the toppings finishing off with the dressing & dollop of hummus. You can get creative here and add it whichever veggies your heart desires!
