Description
Salad:
Small green cabbage, finely chopped
3 baby cucumbers, finely chopped
1/4 cup chives, finely chopped
1 green onion, finely chopped
Dressing:
1 cup baby spinach
1 cup fresh basil leaves
1 shallot
1/3 cup nuts ( I’ve tried cashews and walnuts)
1/4 cup chives or green onion
2 cloves garlic
Juice of 2 lemons
2 tbsp rice wine vinegar
1/4 cup extra-virgin olive oil
1/4 c. nutritional yeast ( optional)
1/2 seeded jalapeño pepper ( optional)
Kosher salt
Freshly ground black pepper
Ingredients
- Place the salad ingredients into a bowl
- Blend dressing ingredients together and toss on salad
