Ingredients

- 1 cup carrots, shredded
- 1 cup cooked/canned black beans
- 1 cup oat flour (this means oats processed into powder “flour”!)
- 1/2 cup chopped onion
- 1/2 cup sunflower seeds
- 2.5 tbsp ground flax + 1/2 cup warm water, mixed in bowl
- 2 tbsp light tamari or soy sauce
- 1/4 cup ketchup
- 1 tbsp fresh chopped dill
- 1 tsp curry powder
- 1/2 tsp cayenne pepper
- 1/2 tsp chili powder
- 2 tsp garlic powder
- sea salt and black pepper, to taste
Instructions
- Preheat oven to 350F and line a baking tray with parchment paper
- In a small bowl combine ground flax seeds with ½ cup warm water and allow to sit for about 10 minutes until it forms a gel/ “flax egg”.
- In a small bowl mash up black beans using a fork. (It’s okay if not everything gets mashed up).
- Place all ingredients into a large mixing bowl and stir very well.
- Wet your hands and form 6-8 burgers and place onto lined baking sheet
- Bake for 30 minutes, and flip burgers halfway through!
Notes
- For a crispier burger you can pan fry each burger for 2 minutes per side prior to baking OR fully cook in a skillet for 5-6 minutes per side.
- A serving looks different for anyone! I typically have 2 as part of my meal.
