Ingredients

  1. 1 cup carrots, shredded
  2. 1 cup cooked/canned black beans
  3. 1 cup oat flour (this means oats processed into powder “flour”!)
  4. 1/2 cup chopped onion
  5. 1/2 cup sunflower seeds
  6. 2.5 tbsp ground flax + 1/2 cup warm water, mixed in bowl
  7. 2 tbsp light tamari or soy sauce
  8. 1/4 cup ketchup
  9. 1 tbsp fresh chopped dill
  10. 1 tsp curry powder
  11. 1/2 tsp cayenne pepper
  12. 1/2 tsp chili powder
  13. 2 tsp garlic powder
  14. sea salt and black pepper, to taste

Instructions

  1. Preheat oven to 350F and line a baking tray with parchment paper
  2. In a small bowl combine ground flax seeds with ½ cup warm water and allow to sit for about 10 minutes until it forms a gel/ “flax egg”.
  3. In a small bowl mash up black beans using a fork. (It’s okay if not everything gets mashed up).
  4. Place all ingredients into a large mixing bowl and stir very well.
  5. Wet your hands and form 6-8 burgers and place onto lined baking sheet
  6. Bake for 30 minutes, and flip burgers halfway through!

Notes

  1. For a crispier burger you can pan fry each burger for 2 minutes per side prior to baking OR fully cook in a skillet for 5-6 minutes per side.
  2. A serving looks different for anyone! I typically have 2 as part of my meal.
