5 cups seedless watermelon, cubed
3–4 baby cucumbers, thinly sliced
1 cup lightly packed feta
1/4 cup or more of fresh mint, thinly chopped
2 tbsp extra virgin olive oil
Juice of 1/2 lime
Mix ingredients together and enjoy!
Serve with: quinoa salad + veggie burgers, chicken skewers + roasted carrots, grilled white fish + smashed potatoes, or just enjoy on its own 🙂
