Ingredients

Scale

For the meatballs:

  • 1 lb grass-fed beef
  • ¼ cup almond flour
  • ½ tsp chili flakes
  • ¼ cup packed chopped green onion
  • 1 egg
  • 1 tbsp of extra virgin olive oil
  • 1 jar of your favourite sauce (I like spicy arrabbiata!)
  • Sprinkle of salt & pepper

For the Broccoli:

  • 1 head of broccoli
  • 1/2 tbsp extra virgin olive oil or avocado spray
  • Salt & pepper to taste

Instructions

For the meatballs:

In a bowl combine the meatball ingredients and form into balls.

In a sauce pan or cast iron pot, heat 1 tbsp of extra virgin olive oil. Once hot, add in your meatballs making sure they do not overlap. Brown on each side approx. 2-3 minutes per side. Add in 1 jar of arrabbiata sauce  and ¼ cup of water. Give it a mix, cover, and simmer for 20 minutes.

Air fryer broccoli: Cut 1 head of broccoli into florets. Line your air fryer with foil and add in the broccoli. Spray with avocado oil or add ½ tbsp of extra virgin olive oil. Lightly season with salt and pepper and cook at 300 for 12 minutes.

Oven roasted broccoli: Line a baking sheet with parchment paper, follow the directions above but bake at 400 for 18- 20 minutes until broccoli edges are crispy.
