Ingredients
  1. 1 package vermicelli noodles ( I like the brown rice ones!)
  2. 2 heaping cups shredded green cabbage
  3. 3 medium carrots, shredded
  4. 3 green onions, chopped
  5. 2 tbsp sesame seeds
  6. 1/2 cup toasted pumpkin seeds
  7. 1/4 cup toasted sunflower seeds
  8. 1 can chickpeas, rinsed & drained
  9. 1 cup cooked shelled edamame (optional)
  10. handful of baby spinach, chopped
Dressing
  1. 1/4 cup olive oil
  2. 1/4 cup fresh lemon juice or rice vinegar
  3. 3 tbsp low sodium tamari or soy sauce
  4. 1 tbsp sesame oil
  5. 1 tbsp real maple syrup or honey
  6. 1 clove fresh garlic, minced
  7. 1/2 tbsp ginger, mincer
  8. 1 tsp siracha (optional)
Instructions
  1. Cook noodles according to package
  2. Place noodles in a large bowl, and add the rest of ingredients.
  3. In a small bowl, whisk dressing ingredients together. Pour over noodle mixture and stir well!
