Ingredients
  1. 1 tbsp olive oil
  2. 1 medium onion, diced
  3. 2 medium/large carrots, diced
  4. 3 ribs celery, diced
  5. 1 can cooked lentils, drained
  6. 2 cloves garlic, minced
  7. 1 tsp fresh ginger, minced
  8. 1 large tomato
  9. 1 tsp tumeric powder
  10. 1 tsp dried thyme
  11. 1/2 tsp cayenne pepper
  12. 4 cups chicken soup or vegetable stock
  13. salt & pepper
  14. 1/2 lemon
Instructions
  1. In a medium pot or dutch oven (cast iron pot) heat olive oil over medium heat
  2. Add in diced onion, carrots, celery, minced garlic & ginger. Sprinkle with a little salt and cook until veggies are soft/translucent (about 5-7 minutes)
  3. Add in lentils, chopped tomato, tumeric, thyme & cayenne pepper. Stir until well combined and alow flavours to come together for about 2-3 minutes
  4. Add in chicken soup stock and bring to a boil. Once boiled reduced temperature to low/simmer and cover and let cook for 40 minutes
  5. Using an emursion blender (handheld blender), blend some of the soup, leaving the soup thick with texture but not fully pureed
  6. Season with salt/pepper if needed
  7. Squeeze lemon juice on top of each serving! (Don't skip this!!)
Notes
  1. For more protein- Add on a few dollops of plain greek yogurt for a creamy & protein rich option :)
  2. For a hearty option- Add in cooked quinoa or brown rice
