Peanut Butter Puffed Millet Granola Bars

  1. 2.5 cups puffed millet
  2. 1/2 cup peanut butter
  3. 1/2 cup coconut nectar (may sub maple syrup or honey)
  4. 2 tbsp sunflower seeds
  5. 2 tbsp pumpkin seeds
  6. 1 tbsp vanilla protein powder (I use Genuine Health brand)
  7. 1 tsp pure vanilla extract
  1. Line an 8-in square baking pan with parchment paper
  2. In a large bowl stir all the dry ingredients (puffed millet, protein powder, sunflower seeds & pumpkin seeds)
  3. Melt (in microwave or stove) peanut butter, coconut nectar and pure vanilla extract
  4. Pour wet mixture into dry mixture, and stir well
  5. Spread mixture evenly onto the lined baking pan
  6. Using a piece of wax paper/ baking sheet firmly press down onto the mixture
  7. Freeze for 1 hour before slicing
  1. I like to store the bars in the freezer.
  2. Some pieces will crumble, so I like using them as a yogurt topping
